    TRUTH, PURITY, AUTHENTICITY, NATURE

Domaine Chantal Lescure is located in a strip of 20 appellations between Chambolle-Musigny and Volnay, in Burgundy. Between the Côte de Beaune and the Côte de Nuits, the estate's 18 hectares are remarkable for the diversity of their terroirs.

The vineyards cultivate Pinot Noir, Pinot Blanc, Pinot Gris, and Chardonnay grape varieties. They share a soil that is calcareous, clay-limestone, clay-silt, and stony. The diverse exposures enjoyed by each vineyard plot contribute to the unique character of the grapes grown by the estate. As explainedFrançois ChavériatThe Burgundian climate allows the berries toto gorge on energy.

    A LOW-INTERVENTION WINEMAKING PROCESS

After a hand-harvesting, the winemakers rigorously sort the grapes. The berries are then placed in vats for cold pre-fermentation. Malolactic maceration takes place in closed, temperature-controlled stainless steel tanks. These modern tools allow for segmented vinification, enabling a more individualized approach to the terroir and the specific characteristics of each grape variety. The wines are then moved to the estate's cellars for aging. They are placed in oak barrels, with the percentage of new oak rarely exceeding 50%. The majority of the barrels are new oak, typically around 30%. Aging lasts between 16 and 20 months.

The winemaking process is traditional and minimally interventionist. Indigenous yeasts, for example, are an integral part of the winemaking process. Thus, the cellar master,François Chavériat, links modern winemaking tools with tradition in winemaking.
