    Vinification and aging

    Winemaking at Domaine Faiveley is a meticulous process, blending tradition and innovation. The Pinot Noir grapes are hand-harvested, then destemmed and gently crushed. Fermentation takes place in temperature-controlled tanks to preserve the freshness of the aromas. Aging, which lasts approximately 12 to 18 months, occurs in oak barrels, some of which are new, to impart a subtle touch of wood without masking the fruit. This care at each stage of winemaking results in wines of great finesse and beautiful structure.
