The vines of Mas Cal Demoura are rooted in the clay-limestone soils of the Larzac foothills, a terroir renowned for its freshness and complexity. The vineyard is cultivated organically, without chemical inputs, with deep respect for the environment. This terroir, both poor and well-drained, allows for the extraction of great minerality in the white grapes, giving the Etincelle cuvée a beautiful expression of the soil and its temperate southern climate.

Owner and history

The Mas Cal Demoura estate is now run by Vincent Goumard, a former engineer who has become a passionate winemaker. After studying oenology and making an exemplary career change, he took over the estate in 2004. His vision: to express the great terroirs of the Languedoc with sincerity while respecting nature. His exacting standards and commitment to organic viticulture make his wines, such as Etincelle, vibrant, accessible, and authentic, highly praised by wine lovers.

Vinification and aging

At the estate, the winemaking process is carefully managed, with gentle pressing and slow fermentation at low temperatures to preserve the aromatic finesse.
The 2024 Etincelle vintage benefits from partial aging in stainless steel tanks and old barrels, with minimal oak influence, to enhance the purity of the fruit. This meticulous approach results in a vibrant wine with clean aromas and an elegant texture, perfect for enjoying young while still offering a complex and complex palate.
