    Vinification and aging

    The winemaking process at Petit Clos is carried out with meticulous care, with each grape variety vinified separately. The grapes are harvested by hand, then carefully destemmed and crushed. Alcoholic fermentation takes place in temperature-controlled stainless steel tanks, allowing for precise temperature management. Aging in French oak barrels, some of which are new, lasts approximately 12 months, imparting complexity and structure to the wine. This aging method allows for the subtle integration of oak aromas while preserving the wine's fruity expression and terroir.
