It all began with a shared passion between Tim Ford (British) and Anthony Record (South African). In 2004, they built a winery and a few years later, a gourmet restaurant. In doing so, they created a place conducive to wine tasting, where quality dishes and delicious wines come together. This quality of products is made possible by a deep commitment to the authenticity of the terroirs and the traditions of theLanguedocIn addition to preserving this precious heritage, significant emphasis is also placed on innovation. Finding balance with nature
Vincent Chansault manages the estate and the winery. To produce quality wine, he adopts environmentally friendly viticulture practices. Preserving the terroir is indeed a true priority for him.Gayda EstateThe vines are balanced, treated naturally without the use of chemical fertilizers or herbicides. Yields are naturally controlled. Furthermore, the vineyards are certified inorganic farmingSince 2011, the harvest has been done by hand. The grapes are picked into small crates, and some berries are even transported in a refrigerated truck when they come from plots too far from the winery. Every effort is made to ensure the highest quality grapes. At the winery, the harvest is also sorted by hand—a tradition! Fermentation then takes place in stainless steel tanks. The wine is then aged for between nine months and two years.
