Owner and history

A Grand Cru Classé estate located at the gates of Bordeaux, Château Haut-Bailly, a single 30-hectare property, sits atop one of the highest gravelly hillocks on the left bank. The slopes, with their efficient drainage and well-distributed ditches, ensure perfect water runoff. The soil is composed of sands mixed with Quaternary-era gravel deposits, overlain by faluns, or petrified fossil rock.

Vinification and aging

Hand-harvested, sorted, destemmed, and undergo a third sorting on a vibrating table. Vinification takes place in 26 temperature-controlled cement tanks of varying sizes (from 50 to 115 hectoliters). Alcoholic fermentation lasts 8 to 10 days, but maceration continues for 3 weeks. Blending takes place in stainless steel tanks.
