The Château Haut-Bailly vineyard stretches across gravelly soils, characteristic of the Pessac-Léognan region. This exceptional terroir, composed of gravel, sand, and clay, offers optimal drainage while retaining the moisture necessary for the vines. Bordeaux's temperate oceanic climate, with its hot summers and mild winters, promotes a slow and harmonious ripening of the grapes. The diversity of grape varieties cultivated allows for the production of wines of great complexity, reflecting this unique terroir.

Owner and history

Currently, Château Haut-Bailly is managed by the Wilmers family, who acquired the estate in 1998. Passionate about oenology and winemaking heritage, they are dedicated to enhancing the value of this Grand Cru Classé. Their approach is environmentally conscious and innovative, integrating sustainable and responsible practices into the vineyard management. Under their leadership, the estate has experienced a renaissance, producing wines that are increasingly recognized internationally, while preserving the authenticity and identity of the Château.

Vinification and aging

Winemaking at Château Haut-Bailly is a meticulous process, blending tradition and technology. The hand-harvested grapes are carefully selected to guarantee quality. Fermentation takes place in temperature-controlled stainless steel tanks, allowing for optimal temperature management. After fermentation, the wine is aged in oak barrels, some of which are new, for 12 to 18 months. This aging process imparts structure, complexity, and subtle aromas to the wine. Each step is carefully considered to enhance the expression of the terroir.
