The Château Simone vineyard covers approximately thirty hectares nestled on north-facing slopes with limestone and stony soil. This unique terroir, situated at an altitude of over 200 meters, imparts a natural freshness and tension to the grapes. The vines for the 2022 vintage, averaging 50 years old, are cultivated with respect for the natural balance of the ecosystem, employing meticulous vineyard work that preserves the distinctive character of each plot.

    Owner and history

Château Simone has belonged to the Rougier family since 1830. Today, Jean-François Rougier carries on this tradition with exacting standards and discretion. Faithful to the estate's philosophy, he strives for the purest expression of the terroir by minimizing intervention. Far removed from fleeting trends, he crafts distinctive, unique wines with strong personalities. His commitment to sustainable viticulture guarantees the preservation of this rare and prestigious wine heritage.

    Vinification and aging

The winemaking process adheres to traditional methods, with slow pressing and fermentation in large oak casks. The wine is then aged for 12 months on its fine lees in small, old casks, without stirring, which promotes complexity and texture.
The 2022 vintage, crafted with the same meticulous attention to detail, yields a wine of great density, balanced by a precise acidity. This patient aging process results in a structured and harmonious white wine, worthy of the finest Mediterranean wines.
