    On a north-facing sloping vineyard, the vines are over 50 years old, some of which are over a hundred years old.

    Vinification and aging

    - Harvested exclusively by hand, at full ripeness
    - Fermentation with indigenous yeasts
    - Aged in small oak casks for 18 months, including 6 months on fine lees
    - Aged in barrels for 1 year
