Tasting notes

Enjoy with lamb shank with thyme, caramelized pork ribs, or a fine rib of beef. Fondant potatoes, mushrooms, and candied eggplant make perfect accompaniments. Serve at around 16°C after opening for at least an hour, especially when young.

Owner and history

Red grape varieties make up the majority of the Clos des Papes vineyard. The vines are on average 35 years old, growing on Miocene soil, on plateaus or terraces. The soils are covered with pebbles. The vines are certified organic.

Vinification and aging

- Aged for 12 to 15 months in large oak casks. No filtration
