The Domaine Henri Boillot vineyard stretches across clay-limestone soils, typical of the Côte de Beaune. The vines, some several decades old, benefit from optimal sunshine and a favorable microclimate, allowing for slow and even ripening of the grapes. Clos de la Mouchère, as a monopole, is particularly prized for its unique terroir, which imparts aromatic complexity and striking minerality to the wines. Each plot is cultivated with care, respecting natural cycles to guarantee exceptional quality.

    Owner and history

Today managed by Henri Boillot, the fourth generation of the family, the estate perpetuates a rich heritage of history and expertise. Henri has modernized practices while remaining true to family values. His passion for Burgundy and his respect for the terroir are reflected in every wine, demonstrating a constant pursuit of quality. With meticulous attention to detail, he aims to produce wines that tell the story of the land and its people, while captivating wine lovers worldwide.

    Vinification and aging

Winemaking at Domaine Henri Boillot is a handcrafted process, blending tradition with modern techniques. The grapes are carefully hand-harvested and then gently pressed to preserve their integrity. Fermentation takes place in oak barrels, allowing for a subtle infusion of woody aromas. Aging lasts between 12 and 15 months, with regular lees stirring to enrich the texture. This meticulous attention to detail at every stage ensures a true expression of the terroir and perfect harmony in every bottle.
