Vinification and aging

Winemaking at Domaine David Duband This is an art that blends tradition and innovation. The grapes, harvested by hand, are carefully sorted before being destemmed. Fermentation takes place in stainless steel tanks, allowing for precise temperature control and optimal extraction of aromas. After fermentation, the wine is aged in oak barrels, some of which are new, for 12 to 15 months. This aging process imparts complexity and depth to the wine, while respecting the character of the terroir. The final blend reveals a perfect balance of fruit, structure, and finesse.
