    We enjoy this vintage with monkfish fillet in citrus butter, scallop carpaccio, vegetable curry, or hard cheeses. Serve at around 12°C.

    Owner and history

    This cuvée is a blend from 30 Sancerre parcels, grown on clay-limestone soils. Facing south, the parcels generally benefit from excellent sun exposure. The Sauvignon Blanc vines are cultivated without synthetic products in order to respect the ecosystem as much as possible.

    Vinification and aging

    Hand-harvested, then pressed and fermented in stainless steel tanks. Aged on fine lees for 6 months (10% in barrels).
    Racking, fining and light filtration before bottling.
