Vinification and aging

Winemaking at Domaine Jean-Marc Millot is carried out with absolute respect for the raw materials. The grapes, harvested by hand, are carefully sorted before being destemmed. Fermentation takes place in temperature-controlled vats, allowing for optimal temperature control. Aging on the lees lasts several months in oak barrels, adding complexity and richness to the wine. This traditional method, combined with a modern approach, makes it possible to create wines that faithfully reflect the Burgundy terroir.
