    Owner and history

    The vines of Réserve du Pigeonnier, aged 50 to 60 years, are cultivated with care and respect for the environment. The wine is certified organic by Ecocert and is in conversion to biodynamic farming under the Biodyvin label, guaranteeing production in harmony with nature and the terroir.

    Vinification and aging

    - 25-day maceration under controlled temperature
    - Placed in barrels for malolactic fermentation
    - Aged on lees for 12 months, followed by a minimum of 24 months of aging, also on lees
