The Le Paradis vineyard is an exceptional plot situated on the limestone and clay-siliceous slopes of Sancerre, benefiting from an ideal exposure that promotes the slow and harmonious ripening of the grapes. This unique terroir gives the wine its remarkable balance between tension and depth, with a mineral signature for which the great Sauvignon Blancs of the Loire Valley are renowned. The vineyard is cultivated using organic and biodynamic practices, promoting biodiversity and soil vitality. The plots are maintained without chemical inputs, with natural ground cover and light tilling, guaranteeing wines of remarkable authenticity and purity.

Vinification and aging

At Domaine Alphonse Mellot, winemaking respects tradition while incorporating modern advancements to enhance each vintage. The grapes are harvested at peak ripeness and meticulously sorted, guaranteeing impeccable quality. Fermentation takes place in truncated conical wooden vats and barrels, allowing the wine to develop its full aromatic complexity.
