    Vinification and aging

    Hand-harvesting in small crates, rigorous grape sorting, total or partial destemming depending on the vintage, fermentation in small, temperature-controlled stainless steel tanks, and gentle pressing ensure optimal winemaking. Depending on the vintage, maceration can last from 12 to 15 days, followed by aging for 10 to 18 months in French oak barrels, with 60 to 85% new oak.
