    Owner and history

    The Domaine de Chevalier Blanc vineyard consists of 70% Sauvignon and 30% Sémillon on 7 hectares of vines on clay-gravel soil.

    Vinification and aging

    - Hand-harvested grapes in crates
    - 3 to 5 passes depending on the ripeness of the grapes.
    - Slow pressing for 3 hours, settling and alcoholic fermentation in barrel.
    - Aged in barrels for 18 months with lees stirring, 33% new barrels.
