    Owner and history

    By choosing Chasselas, the winemaker is forced to downgrade his wines to IGP status, even though the vines are located within the Crépy appellation. This indigenous grape variety, full of potential, is cultivated here by hand, using organic and biodynamic methods!

    Vinification and aging

    - Working the soil with horses and harvesting the grapes by hand
    - Winemaking with indigenous yeasts
    - Short aging period to avoid marking the wines (large casks, oak barrels, egg-shaped vats or amphorae)
