Vinification and aging

The winemaking process for Opus One is meticulous, with each step carefully considered to preserve the integrity of the grapes. After hand-harvesting, the berries are meticulously sorted before being destemmed. Fermentation takes place in stainless steel tanks, followed by aging in French oak barrels, some of which are new. This aging process, lasting approximately 18 months, imparts complexity and aromatic richness to the wine. The wine is then carefully blended to create a harmonious cuvée that reflects the soul of the estate.
