Today, his son, Doug Shafer, continues this legacy with the same passion. The estate is also committed to sustainable practices to preserve the environment.     Vinification and aging

    The winemaking process for Shafer Vineyards - Hillside Select Cabernet Sauvignon is meticulous. The grapes are hand-harvested and carefully selected to retain only the very best. After gentle destemming, they ferment in stainless steel tanks to preserve the freshness of the aromas. Aging takes place in French oak barrels, some of which are new, imparting subtle aromas of vanilla and toast.
