    Vinification and aging

    The winemaking process for Vincent Couche champagnes is based on traditional expertise combined with modern techniques. After a meticulous hand-harvesting, the grapes are gently pressed to extract the finest juice. Fermentation takes place in stainless steel tanks and, for certain cuvées, in oak barrels, adding another dimension to the aromas. Aging on the lees follows, fostering the development of complexity and texture on the palate. Each cuvée is then carefully blended to create perfect balance before bottling and the second fermentation in the bottle.
