This terroir ensures optimal drainage and promotes slow and complete ripening of the grapes, particularly the Cabernet Sauvignon. The average age of the vines is 30 years, and the sustainable farming practices aim to preserve biodiversity and the purest expression of the soil. The blend, dominated by Cabernet Sauvignon, finds a mineral and sun-drenched setting here, resulting in structured, elegant wines built for aging.

For several decades, the Merlaut family has meticulously overseen the destiny of Château Chasse-Spleen. Currently managed by Céline Villars-Foubet, the estate blends tradition and modernity with a resolutely quality-driven approach to winemaking. This commitment is reflected in sustainable vineyard management, meticulous plot selection, and precise work in the cellar. Driven by an ambitious vision, Céline Villars continues to elevate the estate to the ranks of Bordeaux's finest, while respecting the appellation's DNA: profound, elegant wines imbued with a free spirit that defines the unique character of Chasse-Spleen.

Vinification and aging

Winemaking at Château Chasse-Spleen follows traditional methods with modern equipment: fermentation in temperature-controlled stainless steel tanks and aging in French oak barrels. The grapes are hand-harvested at perfect ripeness and meticulously sorted before a gentle fermentation that delicately extracts the finest aromas and tannins. The wine then benefits from rigorous aging in French oak barrels, 40% of which are new. This process gives the wine beautiful aromatic complexity, elegant oak, and a balanced structure. The perfectly controlled aging harmoniously highlights the fruit and brings depth and finesse to this promising vintage.
