    Vinification and aging

    Winemaking at Domaine du Clos des Fées is a meticulous process, where each grape variety is vinified separately to reveal its full potential. The hand-harvested grapes are carefully selected. Fermentation takes place in stainless steel tanks, allowing for perfect temperature control. Aging on fine lees imparts a silky texture and aromatic complexity. Les Sorcières 2022 was then aged in oak barrels, adding a touch of elegance and depth to this already captivating wine.
