Vinification and aging

The winemaking of Shiraz at Penfolds Combining tradition and innovation, the winery carefully harvests the grapes by hand, then destems and crushes them before transferring them to vats. Fermentation takes place at a controlled temperature, allowing for the extraction of aromas and color. After fermentation, the wine is aged in oak barrels, often new, to develop its structure and complexity. The team's opinion

The 2023 vintage follows in the footsteps of great years, offering a masterful balance between concentration and freshness: A complex bouquet where notes of wild blueberries, blackberries, and crème de cassis mingle. A floral touch (violet) is perceptible, along with nuances of sweet spices and cedar brought by the precious wood. Palate: The attack is fleshy yet remarkably supple. The texture is often described as "velvety" or "silky." The tannins are fine, tight, and perfectly integrated, supporting a long, lingering finish of dark chocolate and white pepper.
