    This "100% Cotton" wine pairs perfectly with rabbit in mustard sauce, roast pork with fondant potatoes, or spaghetti Bolognese. To fully appreciate its flavors, serve it at around 15°C.

    Owner and history

    The vines are cultivated using organic farming methods, and the winemaker is a strong advocate of agroecology and agroforestry. To promote biodiversity and improve soil quality, he plants a wide variety of trees, plants, and vegetation.

    Vinification and aging

    - Hand-harvested in small crates to preserve the whole grapes
    - Carbonic maceration with indigenous yeasts and very little added sulfur
    - Aged in large oak casks for 6 to 12 months
